Artichoke spread, appetizer

Easy, easy, easy and delicious.

1 can artichokes, strained and coursely chopped
1/2 cup mayonaise
1/2 cup parmesan, plus some reserved for topping
1 tbsp fresh lemon juice

Mix together the ingredients in a bowl and spread evenly into a smallish shallow baking dish. Sprinkle with parmesan and bake at 325F for 10-15 minutes. Brown briefly under the broiler for colour if desired. Serve somewhat cooled as a spread on sliced baguette or crackers. Serves approx. 4 to 6 as an appetizer.
